My favorite snack right now: Trader Joe’s Healthy 8 chopped veggie mix with sunflower seeds and vinaigrette.
I would never have bought this if I hadn’t tried it first as a sample. The vegetables are broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish, and celery. Sounds lame. Tastes good.
Add salt to a couple tablespoons of balsamic vinegar until the vinegar tastes mellow but not salty. Add an equal portion of olive oil to the vinegar. Add about a teaspoon of agave syrup or sugar. Shake. Pour just enough to lightly coat the veggies. Add sunflower seeds (or slivered almonds, or sesame seeds, or whatever).
